Have never caught a White Sea Bass this big (37LB) .When packaging up the filets I noticed large red spots in the meat. Has any one seen this before and could it be parasites ? See pic below.

I would like to eat some of this tonight but I now have CONCERNS!!

Thanks Walt

Looks like blood spots to me, did you bleed the fish when you caught it?

Just dig out the spots and cook it, most fish have parasites but we don't notice them and they cook up just fine.

What I've been doing is bleeding all my fish as soon as they hit the deck, easy chore, just reach in and pull out a gill and put head down in a sack or fish box. After the fish dies say ten minutes or so I gut and gill the fish and try to get on some ice.

I've been told lot of the parasites in fish reside in the gut cavity and as soon as the fish dies they start to migrate into the flesh.

I've noticed that the quality of my fish has improved a lot since I started doing that.

Or just go ahead and freeze it up and send it to me and I'll dispose of all that wormy horrible seabass for
you. Smiler

What Jan said, bleed out all fish destined for the table, I'm sure the sportboats have no trouble with this. Fire will purge fillets nicely! Honestly, it looks like nothing more than blood. Nice fish!

Ok, thanks guys, problem solved. Talked to the guy who caught the 42lb'er on our boat. Says the spots are evenly spaced and in a stright line along the lateral line. Someting to do with the sensors along the lateral line. Start BBQ'ing.
